Chocolate Collagen Energy Bites Recipe
Ingredients

1 cup raw, unsalted pumpkin seeds

1 cup raw flaxseeds

1 cup pitted Medjool dates, packed

3/4 cup cocoa powder, plus more for rolling

1/2 teaspoon sea salt

1 teaspoon pure vanilla extract

1 1/2 cups ProGlow YOUTHFUL collagen

1 banana
Instructions

Grind the pumpkin and flax seeds in a high-speed blender.

Combine the ground seeds, Medjool dates and cocoa powder in a food processor until the mixture is finely ground and feels like wet sand.

Add the sea salt, vanilla extract and banana into the food processor and mix until thoroughly combined.

Time to get messy! Transfer the dough from the food processor into a large mixing bowl and add in ProGlow YOUTHFUL collagen. Use your hands to incorporate the collagen into the batter. The dough will be very sticky from the collagen.

Add 1/4 cup of cocoa powder into an empty bowl for rolling.

Scoop 1 tablespoon of batter at a time and form into a ball. Roll in the cocoa powder to coat. Repeat until the batter is all used up. (If the batter becomes too sticky, place in the fridge for 15 minutes before continuing to roll.)

Arrange the coated energy bites on a plate in a single layer. Place the plate in the freezer for at least 1 hour or until the balls are frozen.

Once frozen, transfer the collagen bites to an airtight container and store in the refrigerator. Enjoy!
